Strawberry-lemon cake truffles from All About Cake (page 189) by Christina Tosi

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

These were a huge hit at a work pot luck. The chocolate step was definitely a messy challenge - I will try the recommendation included here of chilling the cake balls first. Such a fun and whimsical dessert - lots of steps but I love the whole process so I enjoyed. (Definitely need to plan ahead though…)

The truffles were very sweet. They were also really messy to make. I found that after forming the cake into balls, that it was easier to to dip in the chocolate if they were frozen for 5 minutes or until firm. It was also easier to apply the chocolate without using the gloves, which just seemed to make the process even messier. They lasted several days in the refrigerator.
