    I had no idea how this was going to turn out. Cooking vegan for my son who is finally allowed to visit. Very good and tasty overall. Couple of things - the order of which we are told to do things should be different. The cashews need soaking well ahead - which I forgot.. Start with the tomato sauce - it needs cooking down more than stated, hence my end result was a bit too wet. Then griddle the veg. I was dubious about the need for the hazelnut/parsley topping, but it really adds with respect to texture and taste - don't be lazy and skip! It would feed six generously, 8 with sides.
