    I was going to make half of a recipe because it was only two of us and I only had half of the baby Shanghai bak choy on hand anyway. I had half a pound of ground pork for the half recipe but it looked like it was going to make only two meatballs, so I decided to make a full recipe of the meatballs. As it turned out, with all the other stuff added, I could have gotten mor than two meatballs. Unlike most other lion’s head recipe, this one does not include water chestnuts, so there were no crunchy bits within the meatballs and they were all tender and delicious.
