    This was a challenging but fun bake. I had to make the cake layers 3 times as the flour kept clumping leading to overmixed and inedible cakes. I don’t think this is any fault of the recipe but I did end up using the creaming (rather than reverse creaming) method for the 3rd batch of cakes. I also made just 1 batch of the vanilla cake and made 4x 16cm cakes to make a smaller cake. I used homemade lemon curd and made lemon curd marshmallows instead of the jellies to top the cake. The piping was hard work but lots of fun to try something new. I’m really pleased with the cake and would happily make it again.
