    Can substitute unripe mangoes for green mangoes.

    The first time I made this as a dressing for one of the other recipes in the book, I cheated and used mango chutney and mint sauce. The second time I made with an actual mango and herbs, and followed the recipe - but didn't like it as much! It came out a bit sludgy and meh. To be fair this could be because I couldn't get a green/unripe mango as instructed and just used a normal ripe mango?
