Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    I've only made one other bagel recipe before so not an expert. These came out great with a nice chewy texture but was somewhat flat.

    I was pleasantly surprised by these, as I'd been preparing to be snootily disparaging ("no bicarb soda or lye in the cooking water?"), but they were gratifyingly bagel-y, with a satisfying chew. They were also a doddle to make, although I found dunking the bagels in water to be easier with a slotted spoon than with the suggested tongs.
