Perfect roast tomato & garlic soup from Midnight Chicken (& Other Recipes Worth Living For) (page 92) by Ella Risbridger

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I had high hopes for this recipe but I found it very bland as written. I just used regular tomatoes, so maybe they weren't big enough to stand up to all the water? The pesto flavour was a bit lost too. I ended up with a delicious soup by adding more pesto plus smoked paprika, sugar and cayenne, and the roasted tomato flavour came through beautifully that way. I might make it again using larger tomatoes as I like the idea of soup recipes that don't rely on stock.

Good recipe for a delicious and comforting soup. Roasting the tomatoes in a pesto oil dressing is inspired and made all the difference. I used only 500ml of water and I’d use less garlic (6 not 8 cloves) next time.
