Trashy ginger beer chicken from Midnight Chicken (& Other Recipes Worth Living For) (page 102) by Ella Risbridger

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute chicken drumsticks for chicken thighs.

I made this with thighs, my preferred cut. They ended up marinating for a day due to poor planning. We liked the ginger flavor a lot but I don’t know how much came from the ginger beer vs fresh. One comment, the marinade called for a tablespoon of this and that which didn’t seem to be enough volume for the chicken, so I increased proportionately.

Delicious. I rarely have ginger beer in but replacing the 4tbsp with lemonade works just as well. Baking with sweet potato wedges makes for an easy full meal that is delicious reheated too. The sauce is phenomenal.

Pretty good and easy, though not something I'll go out of my way to make again. Maybe the brand of ginger beer makes a difference in the results? Using Gosling's ginger beer and less ginger than the recipe specified, I found it a bit too gingery.

A lovely recipe for juicy and flavourful chicken. Not as “trashy” as advertised, in fact , pretty healthy and clean (well, cleaner than many other drumsticks). I’ll definitely make this again for parties and picnics
