    Delicious! I used standard mozzarella and panko breadcrumbs and i baked the aubergine for 10 minutes before adding the toppings. I suspect she was using small aubergines as I used one large one for 2 of us and ended up with 24 slices, sliced at 6mm on my mandolin. No matter - they all disappeared! Served with the potatoes she mentions in the text - I’ll make those again too!
