This dish takes 2 days to prepare to soak, cook and then drain and dry the wheat berries. Can substitute pine nuts or slivered almonds for unsalted pistachio nuts, paximadia for graham crackers; and Marcona almonds, Jordan almonds, or yogurt-covered almonds for blanched almonds.
