Sour cream apple cake soufflé Cockaigne from Joy of Cooking (Sixth edition 1975) (page 741) by Irma S. Rombauer and Marion Rombauer Becker

Where’s the full recipe - why can I only see the ingredients?

Accompaniments: Angelica parfait

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Delicious dessert. Light and not too sweet. More of a soufflé than a cake. I used three honey crisp apples, made half of the recipe, baked for the same time in a 12.25” x 8.25” pan. Made the mistake of lining the pan with foil rather than parchment, so it sticked to the foil a bit.
