Can substitute pecan meal, sunflower meal, hazelnut meal, or additional gluten-free oat flour for almond meal; coconut oil for clarified butter; unsweetened applesauce for eggs; and walnuts or sunflower seeds for roasted pecans. Dough must be refrigerated at least 3 hours. See recipe for a bar cookie variation.
