Can substitute canned tomatoes for tomatoes, chicken broth for beef broth, heavy cream for whipping cream, Cognac for Madeira wine, and chervil or parsley for chives. Can use the book's "Marie's beef broth (Marie's vleesbouillon / Fond blanc de boeuf)" recipe.
