The book's "Roasted peanuts" called for in this recipe require standing overnight. Can substitute wild boar shoulder for pork shoulder, bird's eye chillies for scud chillies, fresh krachai for pickled krachai, and pickled garlic for pickled turmeric. Can use the book's "Jungle curry paste" and "Chicken stock".
