Old-fashioned double-crust apple pie from Pastry Love: A Baker's Journal of Favorite Recipes (page 273) by Joanne Chang

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

I used 4 Granny Smith and 4 Golden Delicious apples. The filling did not fit in my 9" pie pan even though I mounded it. I baked the extra in a small casserole topped with streusel, so we got a bonus apple crumble out of it. Instead of blind baking the bottom, I followed pie4u's method in the Rhubarb Brown Sugar Pie, which worked very well. The pie was delicious and sliced fairly neatly, and this has got to be my favorite flaky pie crust recipe.
