    A perfectly light and fluffy pancake!

    Three-fourths of this recipe is calculated with weights on a slip of paper & tucked into the page for pre-coffee mornings - our on-repeat pancake recipe. This amount makes a fine breakfast for 2 without sides, no leftovers. Almond milk subs well for dairy, a splash of vinegar stirred in to curdle. (And if XL or jumbo eggs are used, 1 is enough when calculating that 3/4 recipe!)
