Can substitute brown sushi rice for short grain brown rice, kale for cavolo nero, cooked salmon for hot-smoked salmon, nori sheets for seasoned toasted seaweed, lemons or yuzu for grapefruit juice, and the book's "Sesame mayo" for the "Japanese mayo" specified in this recipe. Can use the book's "Seaweed dashi stock" recipe.
