    I added some cubed eggplant to the pan which came out good. Next time I will add some fennel to the mix of artichokes and tomatoes as I think this needs a little more of a vegetable base. I used haddock which worked fine and added a breadcrumb crust. An easy recipe I think you can adapt for company too.
