    Made this again as I finally tracked down Graceburn cheese. It was great, I used pink radicchio and castelfranco. Would do again, was rich and not too bitter than to the sweet dressing and the cheese. Was good for lunch and did feel I need anything extra.

    Used a cheddar because that's all I had in, a crumby cheese would have been much better. I'm not a huge fan of bitter salads but the dressing has a lot of sweetness so I found this well balanced for my personal preference. I used blood orange instead of pomegranate seeds
