    This recipe makes very tender, well seasoned ribs with a prominent smoke ring. I smoked the ribs on a charcoal grill and only opened the vents1/4 of the way to keep the temperature at the suggested range for a gas grill. After wrapping the ribs (without using a wire rack and baking sheet), I transferred them to a gas grill to finish cooking so I wouldn't have to turn on the oven. They were very tender after only cooking an additional hour at 325 degrees.
