    This cake has great flavor with the carrots, pineapple, pecans and spice. Unfortunately my cake turned out dry. I baked it the 40 minutes per the recipe but I think I could have taken it out sooner. Next time I will check it at 30 minutes as suggested in the recipe. The amazing flavor makes it worthwhile to try this recipe again.
