    I made 1 loaf, prepping the biga and soaker the day before baking. The dough was super slack; she does say it will be, but I couldn't really knead it without adding a fair amount of extra flour - even then, it was still very loose. Still, it baked up quite nicely, with a very soft, almost squishy texture, similar to store-bought sandwich bread, but with much better flavor than store-bought. Great for sandwiches such as peanut butter, cheese, or tuna salad.
