Sultana scones from Oats in the North, Wheat from the South: The History of British Baking, Savoury and Sweet (page 170) by Regula Ysewijn

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute granulated sugar for Demerara sugar, and currants for sultanas.

Made 12 small sultana scones and was very happy with the results. Pleasantly sweet with a nice texture. (Won't be buying the cloyingly sweet supermarket versions in future!) Have very little baking experience so used the 2 tbsp of baking powder as listed. Didn't note anything wrong visually or flavourwise but 2 tsp does sound more logical based on the few other things I've baked.

The measurements for baking powder seem to be completely wrong - 2 TBSP? I used 2 TSP, and all was fine. Typo?
