Enchiladas con carne from The Defined Dish: Whole30 Endorsed, Healthy and Wholesome Weeknight Recipes (page 63) by Alex Snodgrass

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Easy and can make ahead and keep in fridge!

Wonderful recipe! Fairly easy to make but it can get messy during assembly. These freeze great too!

This is my family’s favorite dinner. I left out the cayenne for the kids and used homemade chicken broth and tortillas (it’s easier thank you think!) I prepped this earlier in the day and took it out of the fridge to bake just before dinner.

These were devoured by all at a family gathering...including the 7-year old. I did cut the cayenne in half. Otherwise made as written.

This was delicious. We ate with a simple salad, no dressing. I used flax seed tortillas, cornstarch instead of arrowroot starch, and Monterey Jack cheese for the cheese option. Left the cilantro off hubby's, since he has the soap taste gene.
