    I omitted the jalapeno but would use it next time for extra zip. I added a can of black beans to the filling and used Mexican cheese blend, putting some on top of the enchiladas as well. Baked uncovered for 30 min to brown the tortilla edges and cheese. Family loved this, and I liked it too, but thought it could use more acidity, such as salsa verde.
