    Can substitute all-purpose flour for spelt flour, light brown sugar for coconut sugar, sultanas for golden raisins, cornstarch for arrowroot powder, and cooked sweet potatoes for unsweetened applesauce.

    Not crazy good. I used the Spelt flour, applesauce and brown sugar. The were very dense and crumbly and much more of a muffin than a cupcake. Very hard to frost and I had to serve them with a fork as the just fall apart. Kind of bland as carrot cake goes. However the cream cheese frosting is very good and I will use the frosting recipe again.
