    I made 1/2 recipe in an 8"x8" pan, which took 30 minutes to bake. Super quick and easy, the cake was moist and coarse-textured like carrot cake. Cake flavor was good on its own, but really great topped with pineapple cream cheese frosting (2 oz butter, 4 oz cream cheese, 1 cup powdered sugar, 1 Tbsp crushed pineapple, 1 tsp pineapple juice, 1/2 tsp vanilla, 1/2 tsp rum).
