    This was pretty quick and very tasty. Like an elevated taco! One pan preparation, & I cooked like a quesadilla instead of the trifold method in the recipe. Husband, as always, is asking why there’s no onion in this recipe. Will definitely add some next time. Served with a lovely Indian spiced cucumber salad. Corn on the cob would also be great.
