Apple berry streusel cake from Baking Day with Anna Olson: Recipes to Bake Together (page 193) by Anna Olson

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    Can substitute raspberries for cranberries.

This is a lovely, moist loaf cake. I used frozen berries (raspberries topped up with a few blueberries & tossed in a little flour before stirring into the batter) and whole milk. My tester came out clean at 70 minutes so be sure to check it early. At first it seemed like too much streusel but it bakes down in the oven and adds the perfect bit of sweet crunch. The cake itself has nice flavour from the nutmeg (grated from a whole nutmeg) & the apple and then you get the occasional pop of brightness from the berries. A definite repeat.
