    Dense, finely-crumbed cake with great vanilla flavour. I baked as 3, 8" layers which were a little over-done after 25 minutes when I did my first check. (book baking time is 30-35 minutes). Amazingly, the cake was still tender and sliced beautifully. I think the small amount oil in the batter prevented it from drying out. I filled it with passionfruit curd (Rose's Heavenly Cakes), passionfruit Swiss meringue buttercream (Icing on the Cake), and raspberries.
