    I just used 2 Tbsp butter in the topping and 3 Tbsp in the sauce, used penne pasta, a mixture of sharp cheddar and fontina, and added 8 oz crumbled, cooked Italian sausage. Very tasty and filling. The crispy panko topping was a nice contrast with the creamy pasta. I chopped the sage leaves for more even distribution. The sausage got a little lost; slices of smoked sausage would have been more noticeable. Roasted veg might be a nice addition.
