Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    A very important ingredient is missing from this recipe in the book, although it is called for in the instructions. It is "4 ounces of very lean salt pork without rind, washed to remove surface salt, dried carefully and cubed by hand".
