Honey mac 'n' cheese from Original Flava: Caribbean Recipes from Home (page 70) by Craig McAnuff and Shaun McAnuff

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute whole milk for evaporated milk, and cheese crackers or Doritos for cream crackers.

I didn’t understand this recipe - the measurements didn’t really make sense. 1kg of dried macaroni is required but is is an absolutely enormous amount and simply not proportionate to the amount of sauce and level of seasoning in the instructions. I assumed this was an error so went with adding only half the macaroni. I also added an extra dash of salt as otherwise there would only be the salt from pasta water (mostly poured away) and the cheese but given it’s a mild cheddar and mozzarella, this is minimal. I used cheese crackers for the top and tripled the amount. This was by far the nicest part. Wouldn’t make again - firstly because the recipe is faulty and secondly because it was okay with making half the amount of pasta but still I’ve had much nicer macaroni cheese. A disappointment as first recipe I’ve cooked from this book and it looks promising. I won’t give up but not a good start.
