Pesto will keep for 3-5 days in fridge. Can substitute baby rocket, baby spinach, coriander leaves or parsley for basil; and blanched almonds, roasted cashews, walnuts or roasted peanuts for pine nuts. See recipe for suggested combinations and other optional flavourings.
