    It’s a winner with lots of flavor. Any grated cheese will do. I’ve tried Gruyère, store bought grated cheddar cheese or a “Mexican blend”. They all work. It is important to oil the grill grates to lessen the tendency of the burgers to stick. Don’t overcook. These are not appropriate for the smashing technique. Not enough fat.
