Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute California chile powder or additional sweet paprika for New Mexico chile powder, and jalapeño chiles or cherry peppers for Fresno chiles.

Outstanding. Chicken was moist, and the cilantro in the sauce brought a zesty freshness that put the whole thing over the top. I couldn't stop raving the entire time I was eating this. Works just as well with assorted chicken parts if you don't want to spatchcock a whole chicken.

This recipe was a repeat for me and we enjoyed it even more this time. Chicken is tender and juicy and sauce is tangy and bright, not hot, but warmly spiced. The color grabs you and the sauce keeps you coming back for more.

Great layers of flavor with the spice rub under the skin and the marinade/sauce. I used red jalapeños from our garden and the sauce had a nice kick without overwhelming. The addition of cilantro to the sauce at the end adds such a nice bright fresh flavor.
