    This was great. A nice mix of flavours and textures. I used puy lentils so they had some texture. Don’t skip the pickled onions - it seems like a lot but definitely balances out with the beets and lentils. I used a half cup lentils in the pressure cooker for 10 min (and natural release) which made enough for 4 as a salad/side with a main
