    Despite their intimidating looks these cookies are quite quick and easy to make. Make sure not to overfill them with the ricotta cream, otherwise it is very difficult to dip them into the tinted Amaretto. I used both Alchermes and red food colouring to create the red tint, Alchermes alone did not create the peachy colour. On top of their looks, they are also delicious and were a big hit at the dinner party I brought them to.
