The one true apple cake from La Vita e Dolce: Italian Inspired Desserts (page 107) by Letitia Clark

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute plain flour for Italian 00 flour.

My family liked this cake a lot. Unlike many apple cake recipes it doesn't have spices, so the apple flavour really comes through. It would have been helpful if the author had stated the weight of apples rather than just the number, as apples can vary considerably in size. The ones I used were quite large and they made the cake quite moist and dense, although not unpleasantly so. Also, the author refers to 'pouring' the batter into a tin. Mine didn't really have a pouring consistency, it was more like a wet dough. However it came out perfectly once baked.

This one - together with Dorie Greenspan’s Marie-Helene‘s Apple Cake - are the only two apple cakes you really need, both are quick to make and real crowd pleasers.

I really like this apple cake recipe, and it’s a great way to use up a bunch of apples in your fruit bowl...All in all, it’s one of my favourite recipes in La Vita E Dolce.
