    The corn salad is the star here. We don’t have a grill so I used the oven but tasted great with nice and tender pork. I could eat the corn salad every day - smoky, spicy and sweet - what a great combo!

    While my finished tenderloin didn't look like the pic (there is no mention of reserving OR heating the used marinade to use at end but clearly she has done something), it did taste good. I also tried to honor the flavours of the corn salad (chipotle, green onions, lime) but added other things we like with corn & turned it into a hot side dish rather than a cold salad which was still really good next to the pork.
