    Made black bean and ground beef variations using this as a base recipe - turned out delicious!

    Just made enchiladas for the first time with this recipe. They were tasty, although I will add more spices to my sauce next time. (I don’t have access to the brand of tomato sauce mentioned in the recipe that already has red chile pepper, so I was DIY-ing the spices). It also takes a bit of practice to get the tortillas to stay intact, rolled and arranged neatly - my first attempt was not the most beautiful to look at, but I was happy with how it turned out and will definitely make this again!
