    Very tasty! I made this vegetarian by skipping the bacon. As such, it does benefit from the addition of something crunchy and salty (nuts, pepitas, sunflower seeds, etc.). The dressing doesn’t need as much sugar as the recipe calls for as written - I like it with a generous tablespoon (down from 1/4 cup), so I suggest starting low and adjusting to your taste. You can also play around with using a different vinegar (apple cider, red wine, rice vinegar, etc.) and/or cheese (I like it with MontAmore). And if you happen to have them, some pomegranate seeds make a beautiful addition!
