    Tasty and piquant -- I made a little side dish of testine on one side of the bowl, roasted shallots on the other. It took forever, and many, many changes of water, to get them clean. I think it might be easier to clean the whole spinach head, including the testina, before cutting the testina away, but that didn't occur to me till later, so I can't report on whether it's effective.
