    I've never tried the original version of this pie, which has a saltine crust and lemon filling, but this version was great. Not sure how to measure 2.5 cups crackers, I used about 5 oz (48 crackers). 2 cups cream seemed excessive; I whipped 1.5 cups and there was still more whipped cream than filling, so 1 cup may be enough depending on your love for whipped cream. A shallow 9" pie pan worked. I've never made a crumb crust with softened rather than melted butter - it was a bit tricky and next time I'll try melted.
