Croissant pain perdu from Maman: The Cookbook: All-Day Recipes to Warm Your Heart (page 34) by Elisa Marshall and Benjamin Sormonte and Lauren Salkeld

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute pains au chocolat for stale croissants.

Unbelievably, absurdly decadent but easy breakfast. I make it when I have guests and for holidays. It's even better if you can buy day old croissants from a bakery, but this recipe turns out wonderfully with grocery store croissants that are dried out in a low temperature oven.

Everyone enjoyed this, even saying it reminded them of something from a restaurant. It tastes better than it looks. It was exactly what it was supposed to be, a vanilla creamy custard underneath and crunchy croissant on top. The sweetness level was perfect with a little maple syrup. We even devoured this as leftovers. The recipe says it's best eaten fresh but we liked it even better the following days with individual pieces reheated in the oven.
