    Smoked according to recipe directions made a moist, flavorful chicken. The chicken was cooked in only an hour on a kettle grill. After 30 minutes, I added more coals (per recipe instructions) and more wood (not per recipe instructions) since it had stopped smoking. Although the chicken itself was very moist and flavorful, the skin was much darker than I anticipated and was very smoky. My husband liked the flavor; I thought it was too strong. Probably wouldn't add extra wood chips next time. The instructions were very detailed and provided a lot of useful information for those who are new to smoking.
