    Can substitute deli ham for jambon de Paris, and Gruyère cheese for Comté cheese. You may use the Classic pastry dough recipe on p. 79.

    Nice light and creamy quiche. I did use a bought gluten free crust and the recipe made two quiches! Used deli turkey meat. Made for a milder flavor than ham. Cooked in about half the time. Very easy and good. Would redo.
