Buttermilk pancakes from Once Upon a Chef: Weekend/Weeknight: 70 Quick-Fix Weeknight Dinners + 30 Luscious Weekend Recipes (page 201) by Jennifer Segal

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I made these and froze them to eat later in the week. I did taste the last one that was a small pancake and the flavor was really good. I used her method of reheating the pancakes in the oven and that worked really well however mine needed about 13-15 minutes to fully reheat. They were still good after reheating, but not as good as fresh, but I'm glad to have her reheating trick to use in the future. I would make these again!

Very good pancakes of medium thickness. As noted, batter was fairly thick and did indeed get "fluffy" from the leavening as it sat, so my pancakes were somewhat misshapen, but no one cared.
