Five-star beef stew with carrots and potatoes from Once Upon a Chef: Weekend/Weeknight: 70 Quick-Fix Weeknight Dinners + 30 Luscious Weekend Recipes (page 245) by Jennifer Segal

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

My go to beef stew recipe. I’ve made it so many times and it has yet to disappoint.

Delicious, may be my new go to stew recipe. For the next time: one cup less water, put the vegetables in earlier (after 90 minutes which I did today), add Worcestershire, bit more thyme, flour, last hour uncovered.

Very tasty stew, easy to make. The carrots were just cooked, not super soft like in many stews - I actually wouldn't have minded them softer, but I may have cut them slightly large. I added frozen peas at the end. I could see boosting the flavor with Worcestershire or soy sauce like TBackman did.

This was the best beef stew I have ever made, and I've made a lot! The only substitution I made was I used extra beef broth (Better Than Bullion base) for the wine. I love the use of the baby Ukon gold potatoes and the addition of balsamic vinegar to the sautéed onions was brilliant and it created the most intoxicating aroma! I can't wait to make this again!

This is probably one of the best beef stews I have had Pretty easy to make

Best stew to date! Added a tbsp. of soya and worchestshire sauce for more umami plus a 14 oz. can of chopped tomatoes as we love extra tomatoes.

This is a really nice beef stew rich with garlic & wine and an extra hit of flavour from cooking the aromatics with the balsamic vinegar. I had a very sad celery stick that went in with onions & garlic, used fresh thyme in place of dried and I did add peas and some sweet roasted peppers at the end for colour. A lovely cold fall dinner with some garlic toasts on the side.

This was good! Mostly hands-off, so not too much trouble to make.
