Octopus in purgatory (AKA spicy baby octopus stew) (I polpe 'npergatori) from Made in Italy: Over 80 Authentic Recipes From the Heart of Italy (page 246) by Silvia Colloca

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Super simple to put together. I had my doubts but once the octopus was cooked, the juices had reduced to a delicious sauce. Served with bread as mandated by Silvia.
